Tonight's dinner? Easy peasy fish pie

Unbelievably easy fish pie (serves 6 – 8)

What you will need

1kg potatoes (peeled

25g butter

25g flour

a knob of butter

a little milk

4 spring onions, finely chopped

400ml milk

1 pack of fish pie mix (cod, salmon, smoked haddock) About 350 – 400g

1 teaspoon of Dijon or English mustard

A few chives chopped

handful of frozen or tinned sweetcorn

handful of frozen peas

handful of grated cheese

What you need to do
Pre-heat your oven to 200c/ 180 fan oven/ gas mark 6. Boil your potatoes until they’re light and fluffy. When they’re done, mash them up with a touch of butter, milk and black pepper.

In a large saucepan, melt your 25g butter, add your spring onions, chives, flour and milk stirring regularly for about 5 minutes, until it’s hot and thickened. Take it off the heat and mix in your cheese, fish, mustard, sweetcorn and peas (optional).

You can spoon it all into individual ramekins or one large oven proof baking dish. Spread the mash over the top and sprinkle with cheddar cheese. Bake in the oven for 25 – 30 mins. Delish.
