Cooking at home at this time of year can be a pleasure, even for the most reluctant chef. And this recipe is beautifully seasonal, with a Halloween theme that’ll impress your guests or flatmates. So get them round and enjoy a warming, autumnal meal.
Pumpkin Risotto with Bacon and Leeks
Ingredients for the Risotto (serves 2-4)
50ml of olive oil
A couple of garlic cloves chopped up
4 slices of bacon chop the way you like it
1 leek, chopped up
210g arborio rice
950ml chicken broth (hot)
235ml white wine
The insides of a medium sized pumpkin (as much as you want)
Black pepper and chilli pepper (optional).
What you need to do
Heat up your olive oil in a large frying pan. Then add the leeks and cook for about five minutes. Add the garlic, bacon and fry up to a crisp.
Now add the rice and cook, stirring slowly for a few minutes until it is slightly toasted. Add about 235ml of broth and cook more, stirring regularly, until it has been absorbed into the rice. Repeat this process with the remaining broth and then add the white wine.
Stir in the pumpkin, black pepper and chilli pepper, and cook for a few more minutes. Job done!
